


The local cooking
is mainly based on products of the Alpujarra region,
such as the dish known simply as plato alpujarreño, comprising
potatoes, eggs, sausage and black pudding.
Also popular is the hot pot called puchero
matancero, with chick-peas,
potatoes, bacon
and chine. A local speciality is the cured meat from home-reared
pigs (salchichón, longaniza and morcilla).
Sweet dishes are based on local produce including grapes, figs and
almonds, which are used to make desserts such as fig bread and almond
cream.
Don't forget to try local pastries and delicious snacks like soplillos,
made from toasted almonds, beaten egg whites, sugar cane and honey.
Buñuelos (sweet fritters) and doughnuts are made specially
for Easter and Carnival festivities.
